Hearty and filling, this high-fiber soup is a winter favorite. Using pre-chopped vegetables cuts down prep time.

Ingredients

  • 4 cups Chicken broth
  • 1, 10 oz bag Frozen seasoning vegetables
  • 1/2 cup Diced carrots
  • 1 cup Brown lentils
  • 1 cup Ham
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  • In a large saucepan or small stock pot, bring chicken broth to a boil.
  • Add carrots and vegetables.  Return to a boil.
  • Add lentils, ham, salt, and pepper.
  • Cook until lentils are tender, about 30 minutes.
