“I like this cranberry salad, and I don’t even like cranberry salad.” That is the comment you will hear when you bring this sweet and tangy dish to your holiday gathering. Fresh cranberries, apples, and pineapple pack sweet and tart flavor into this diabetic-friendly dish.


Ingredients

1 package Fresh, whole cranberries
Artificial sweetener equivalent to 1 ½ cups sugar
2, 20 oz. cans Crushed pineapple
3 medium Apples, chopped
1 cup Pecans, chopped
1 large box Sugar free strawberry gelatin
1 cup Boiling water

Directions

  1. In food processor, chop cranberries.
  2. Move cranberries to a mixing bowl and stir in sugar or sweetener. Add undrained pineapple, apples, and pecans.
  3. Dissolve gelatin in 1 cup boiling water. Pour over mixture and stir.
  4. Refrigerate until gelatin is set, about 2 hours.
